Yoshizen, Inc. took over a restaurant "Kitsho" in Cupertino in July 2012.

We serve traditional Japanese style of sushi, sashimi, and other Japanese food.

Yoshizen (Kitsho)'s "Kodawari" (like philosophy, principle, particular about something...., hard to translate straight in English)

We are particular about authenticity

We are particular about freshness

We are particular about quality

We are particular about provenance of fish

We are particular about seasonal fish & ingredients

Also we are very particular about the rice and vinegar:

You may notice that we do use "Tanryumai" (short-grain rice, variety - Koshihikari, California rice but closer to the rice that you can get in Japan) and "Akazu (kasuzu)" (dark colored vinegar made from lees, especially used for sushi over 200 years!) for our sushi rice

Owner Chef Gen's Profile

After graduated Tsuji Culinary School of Japan in 1979, he learned not just Japanese cuisine but also French cuisine and confectionery. Over 30 years of experience as a chef at many different restaurants and hotels (include: Hotel Hanshin in Osaka, Pan Pacific Hotel in SF, Jean Moulin in Kobe, Ginso La Salle in Hawaii, etc and Japanese restaurants all over the bay area for the last 10 years), he is pleased to open his first own restaurant in Cupertino.
